Title: Fresh Pineapple Slaw

2cChopped fresh pineapple
1mdCarrot, shredded
1mdGreen pepper, julienned
3tbWhite wine vinegar
3tbUnsweetened pineapple juice
1tbHoney
1tsOil
2ozCrumbled blue cheese

1. Combine pineapple, carrot, and green pepper in a medium bowl, toss gently. Combine vinegar, and the next 3 ingredients and stir well with a wire whisk. Pour over pineapple mixture and toss. Cover and chill 1 hour. Top with blue cheese just before serving.

Per serving (1/2 cup) - 90 cal.
